San Choy-Bau

Ingredients:

  • 2 tbsp. sesame oil
  • 2 garlic cloves, crushed
  • 2cm piece ginger, finely grated
  • 500g lean pork mince
  • 1 red capsicum, diced
  • 1 zucchini, diced
  • 1 tbsp. soy sauce
  • 2 tbsp. oyster sauce
  • 3 shallots, thinly sliced
  • ½ lime, juiced
  • 1 cup beansprouts, trimmed
  • 12 large lettuce leaves, iceberg or cos lettuce works best
  • ¼ cup fresh coriander leaves

Serves 4

Method:

  1. Heat a wok or large frying pan over high heat until hot. Add ½ of the sesame oil to the pan and swirl to coat.
  2. Add garlic, ginger and pork. Stir-fry for 2 to 3 minutes or until pork just changes colour.
  3. Add the capsicum and zucchini and continue to stir fry for a further 2 minutes.
  4. Add soy sauce, oyster sauce, onions, 2 tsp. of lime juice and the remaining sesame oil. Stir-fry for a further 2 minutes or until heated through. Stir in beansprouts.
  5. Spoon pork mixture into lettuce leaves. Sprinkle with coriander. Serve and enjoy!
